The perfect snack for school lunches. They are nut free, dairy free, gluten free and good!
1 1/2 c pumpkin puree
2 eggs beaten or (1 tbsp chia seeds mixed with 3 tbsps plant based milk let set until gelled)
1/4 c honey
1/4 c maple syrup
3 tbsp melted coconut oil
1 tsp cinnamon
1 tsp ginger
1 tsp vanilla extract
2 c ground oat flour or 1 c oat flour and 1 c instant rolled oats
1 tsp baking powder
1/2 tsp sea salt
1/4 c ZypChicks Pumpkin Spice hemp hearts
1/4 c mini chocolate chips (optional)
Heat oven to 325. Line muffin tin with 12 muffin cups
In a large bowl beat together the pumpkin, eggs, oil, maple syrup, honey, ginger, cinnamon and vanilla.
Add flour, baking powder and salt. Fold in ZypChicks Pumpkin Spice hemp hearts and chocolate chips.
Divide batter into 12 muffin cups.
Bake 35 min or until toothpick comes out clean.
