Hemp Pumpkin Muffins

The perfect snack for school lunches. They are nut free, dairy free, gluten free and good!⁠

1 1/2 c pumpkin puree⁠
2 eggs beaten or (1 tbsp chia seeds mixed with 3 tbsps plant based milk let set until gelled)⁠
1/4 c honey⁠
1/4 c maple syrup⁠
3 tbsp melted coconut oil⁠
1 tsp cinnamon⁠
1 tsp ginger⁠
1 tsp vanilla extract⁠
2 c ground oat flour or 1 c oat flour and 1 c instant rolled oats⁠
1 tsp baking powder⁠
1/2 tsp sea salt⁠
1/4 c ZypChicks Pumpkin Spice hemp hearts⁠
1/4 c mini chocolate chips (optional)⁠

Heat oven to 325. Line muffin tin with 12 muffin cups⁠
In a large bowl beat together the pumpkin, eggs, oil, maple syrup, honey, ginger, cinnamon and vanilla.⁠
Add flour, baking powder and salt. Fold in ZypChicks Pumpkin Spice hemp hearts and chocolate chips.⁠
Divide batter into 12 muffin cups.⁠
Bake 35 min or until toothpick comes out clean.⁠
