No Bake Superfood Dark Chocolate Brownie Energy Bars

I’ve made some good mood food today because yesterday was blue Monday....
And who can resist a recipe with all your favorite superfoods? Especially when that recipe is a brownie!
Try it! These brownies will make you!

No Bake Superfood Dark Chocolate Brownie Energy Bars
For the bars:
1 cup packed pitted dates
1/2 cup nuts - I used walnuts and
1/2 cup ZypChicks hemp hearts
1/4 cup shredded unsweetened coconut
1 tbsp chia seeds
3 tbsp cocoa powder
1 tbsp melted coconut oil
1 tsp vanilla
1/4 tsp sea salt
1/4 cup goji berries or dried cherries
1 tbsp or more warm water (I used coffee)
2 tbsp instant coffee (optional)
For the topping:
1 1/2 oz dark chocolate, unsweetened & vegan, if desired
Goji berries
Chopped pistachios or other nuts or seeds
ZypChicks local hemp
Sea salt
Add dates, hemp and 1/4 cup of the nuts to the food processor. Process until chunky.
Add coconut, chia, cocoa powder, coconut oil, vanilla, and coffee powder (if using). Process until mixture is chunky and slightly clumping. You may need to add a bit of warm water or black coffee.
Add remaining nuts and goji berries. Pulse a few times. Spread the mixture in an 8x4 loaf pan lined with parchment paper.
Melt the chocolate in a double boiler (I just use 2 saucepans) or microwave wave until melted.
Pour the chocolate over the bars and quickly garnish with goji berries, chopped pistachios, hemp hearts, and a sprinkle of sea salt.
Place the bars in the freezer 30 minutes to an hour to harden. Store safely in the freezer for up to one month.
If you want, you can leave off the melted chocolate. They’re still amazing!
