No Bake Superfood Dark Chocolate Brownie Energy Bars

I’ve made some GOOD MOOD FOOD today because I'm still getting used to all the snow...and the time change...and the DARK!⁠
How are you guys doing with all this?⁠
This recipe is full superfoods. AND it is a brownie!⁠
Try it! These brownies will make you 😃 ‼️⁠

No Bake Superfood Dark Chocolate Brownie Energy Bars⁠
For the bars:⁠
1 cup packed pitted dates⁠
1/2 cup nuts - I used walnuts and⁠
pecans⁠
1/2 cup ZypChicks hemp hearts⁠
1/4 cup shredded unsweetened coconut⁠
1 tbsp chia seeds⁠
3 tbsp cocoa powder⁠
1 tbsp melted coconut oil⁠
1 tsp vanilla⁠
1/4 tsp sea salt⁠
1/4 cup goji berries or dried cherries⁠
1 tbsp or more warm water (I used coffee)⁠
2 tbsp instant coffee (optional)⁠
For the topping:⁠
1 1/2 oz dark chocolate, unsweetened & vegan, if desired⁠
Goji berries⁠
Chopped pistachios or other nuts or seeds⁠
ZypChicks local hemp⁠
Sea salt⁠
Instruction:⁠
Add dates, hemp and 1/4 cup of the nuts to the food processor. Process until chunky.⁠
Add coconut, chia, cocoa powder, coconut oil, vanilla, and coffee powder (if using). Process until mixture is chunky and slightly clumping. You may need to add a bit of warm water or black coffee.⁠
Add remaining nuts and goji berries. Pulse a few times. Spread the mixture in an 8x4 loaf pan lined with parchment paper.⁠
Melt the chocolate in a double boiler (I just use 2 saucepans) or microwave wave until melted.⁠
Pour the chocolate over the bars and quickly garnish with goji berries, chopped pistachios, hemp hearts, and a sprinkle of sea salt.⁠
Place the bars in the freezer 30 minutes to an hour to harden. Store safely in the freezer for up to one month.⁠
If you want, you can leave off the melted chocolate. They’re still amazing!
